Having grown up in Texas and now lives in southwest Ohio, are flat black-eyed peas New Year's Day that I eat absolutely. My mother Hoppin John recipe is below, but first let's discuss why it is so important to make January 1 eat.

Eating black-eyed peas for New Year is to bring prosperity in the new year, and I can tell, this could be a truth. Since I got married eight years ago, I did not do Black Eyed Peas, because my husband refuses to eat beans of all kinds (except green). Why this effort just for me? Perhaps not coincidentally, we have not become rich because we either already married. My husband has been reduced by one year after our marriage, and the company I work for went bankrupt a few years ago. I think I will serve New Year's Black Eyed Peas on this time and I'll tell you next year when he helped our finances. Fortunately, black-eyed peas are cheap.

Speaking of costs, I always had the vague impression that the main reason they are used sparingly south to New Year, because they are cheap, filling and good for you ... all the things you need if you are bankrupt at Christmas. Another theory of mine is that fiber consumption so on New Year's Day holiday will help eliminate bloating. This works especially well if you do not have much of each fiber on a regular basis, you clean up after eating a bowl of Hoppin John 'will be epic. If it does not stop after 24 hours, some Immodium.

Soak peas overnight in water, then drain and rinse. This will be found to eliminate some of the gas consumption of beans. If you do this in advance, just rinse the peas, then forgot to cook them longer, until tender, adding water if necessary. You must also have a Beano at hand.

Brown ankles in butter in a large heavy saucepan over medium heat storage. Then add onion and stir until they become translucent. Add peas and mix to make 8 cups water and bring to boil. Cover and simmer for several hours, stirring occasionally. When the meat starts to fall to the ankles, they are ready. Use your spoon to break up the meat and remove bones. Add a little salt and pepper to taste and serve with corn bread or rice.

NOTE: If you do not use after season, pork, peas, I found to replace a delicious smoked turkey. You can usually find a smoked turkey leg or wing in supermarkets, sometimes in the frozen food department. Just skip the browning. Onions, then Turkey and peas and water to go.
